DOM DELUISE KING CROWN CAKE
Another recipe from Dom's children's book, King Bob's New Clothes. This is a great way for the kids to make dessert, and have fun at the same time.

Number Of Ingredients 5
|4 pancakes (approx. 6 to 8 inches in diameter)|
|1 (8 ounce) can crushed pineapple|
|1 (8 ounce) container Cool Whip|
|candy covered plain chocolate candies or nuts|
- Place the first pancake on a platter, then in order spread 2 tablespoons of crushed pineapple, and 2 tablespoons of Cool Whip.
- Follow layers until all the pancakes are used.
- Spread remaining Cool Whip on top and sides of stack.
- Place strawberries (rubies) on the top outer rim of the cake.
- Add the candies as the crown jewels.

MAMMA'S ESCAROLE SOUP
That's Dom DeLuise's Mamma. The recipe originated in Spinosa, Italy. If you want a carnivorous variation, you can some spareribs and/or Italian sausages with the garlic, and brown well before adding anything else. To make this completely vegetarian, use vegetable stock in place of chicken stock. You can add water or a little more broth if the soup is too thick. Serve with hot Italian bread.

|2 tablespoons olive oil|
|2 garlic cloves, minced|
|1 onion, chopped|
|2 carrots, sliced|
|1 potato, peeled and diced (optional)|
|2 cups chicken broth|
|2 heads escarole, washed and coarsely chopped|
|parmesan cheese, grated|
- Heat olive oil in a large saucepan and brown the garlic.
- Add onion, carrots, and potato (if using). Cook 1 minute.
- Add broth.
- Add escarole, cover, and bring to a boil.
- Reduce heat to low and simmer for 1 hour.
- Spoon into bowls and sprinkle with grated cheese.

|2 cups Italian bread crumbs|
|1 cup milk|
|1 cup parsley, chopped fresh|
|1 cup cheese, grated|
|1 tablespoon olive oil|
|2 cloves garlic, chopped fine|
|1 onion, minced|
|1/2 cup Pignoli pine nutsoptionl|
- Place all ingredients in a large bowl and mix thoroughly. Let stand 1/2 hour. Shape into medium sized meatballs. Fry gently in olive oil until lightly browned, or place on foil on a cookie sheet and bake for 1/2 hour at 350 degrees fahrenheit. Gently place in your own hot spaghetti sauce and cook on medium low heat for 1 hour.
